I think some of the later series maybe had "better" music as far as the scope, but the origianal background music at least had themes.

I would say Enterprise, Voyager, and DS9.

Definitely TOS. Just try humming some of the "music" from the other series. You can't do it. But everyone remembers the "fight scene" music from "Amok Time"!
