This has probably been done before, but what do you like better, Sisko with the hair or beard? Or maybe how he looked in those few episodes when he had both?

Beard but no hair. He's just not The Sisko without it.

Baldie beardy Sisko has a far more iconic image than he did earlier.

Captain Sisko looked much better, I think, when his head was shaved, but he wore a beard. In those shows, I think the beard looked better than a cleanly shaven chin.
