I think Troi is a good counselor but there are things that some crew members won't tell her that they would/could tell their bartender. Guinan was not only a good listener, but she gives advice and the person on the receiving end doesn't feel like they've just been analyzed like they might with Troi. So to have both on board is the best of both worlds
