I personally think Sisko v Dukat was a matchup for the ages. It definitly added a great dynamic to the show and made it so much more fun to watch, especially when Dukat totally lost his mind!

That qualyfies as though Prophet v Powerwrath, Cardassian v Federation, Cardassian v Klingon, Section 31 v Fed or Dominion v Fed.

I like Sisko vs Dukat, as fierce opponents.  But, Odo vs Quark was fun to watch, on a comedy basis.
