According to later Voyager novels, Neelix found a Talaxian colony in the Delta Quadrant and started a family there, although he occasionally encountered some of his Voyager friends, again.

He found a whole colony of his own species to annoy. And then the Voyager crew risked everything to put as fast as they could several thousand lightyears between them.
