Your reasoning is flawed. 
They never could replicate 29th century technology, and since holodecks are based on the same principles as replicators......

I doubt it. Something tells me it wouldn't be able to hold itself together the way it does the Doctor.

No. The emitter would still be hollographic and therefore not exsist outside the holodeck. It would disappear, taking the program with it.

Wait wait wait...wouldn't you just have the holographic emitter attatched to the real one? Why would you want to do that?

The idea is for a holographic mobile emitter to sustain itself outside the holodeck after it is formed in the holodeck. Basically, it would be like M.C. Escher messing around with holotechnology.

Yes, and before that, he walked out of the holodeck after falling in a stream and dripped water on the floor outside the holodeck.
Also, Data carried a piece of paper with a drawing of the Enterprise from the holodeck.

Just wondering what happens with the food they consume on the holodeck. Does it dissapear too, or not? What would happen if someone would stay several weeks or months on the holodeck and then would leave the holodeck?

A holodeck restaurant would be a less disgusting version of binge & purge.
Part of the problem is that the first conversation used to establish what the holodecks were indicated that "much of it is real" and Data even compared it to the transporters stating that those patterns were less complex than the people who go through the transporters routinely and those patterns are stored in the computer. Later though, it was established that the holodecks used "photons & forcefields".
