There's a lot of good ones out there, but my all time favorite was in ST VI, when the crew was ordered to put back to space dock to be decommissioned, and Spock said:

"If I were human, I believe my response woud be 'go to hell'. If I were human."

I've always liked it when Spock comes out of his bag a little. That was classic.

What does god need with a starship?

A valid question.

Are you sure it isn't time for a colorful metaphor?

Great one.

"I am and shall always be your friend" always gets me.

Yes, and from the same movie: "I need my pain" - brilliant

LILY: "Jean-Luc, blow up the damn ship!"

PICARD: "NO! NO!" (smashes display case)

(long dramatic pause)

PICARD: "I will not sacrifice the Enterprise. We've made too many compromises already. Too many retreats. They invade our space and we fall back. They assimilate entire worlds and we fall back. Not again! The line must be drawn here. This far, no further! And I will make them pay for what they've done!"

-----------------------------------------

Probably my favorite quote, period. Though "Time is the fire in which we burn" from Generations and Picard's "How many people does it take" speech in Insurrection are also great.

I feel like I'm missing a really obvious one...give me some time to remember.

"The future is in the hands of those who explore... And from all the beauty they discover while crossing perpetually receding frontiers, they develop for nature and for humankind an infinite love." - Jacques Yves Cousteau

I love a lot of Khan's dialogue on STII: TWOK especially:

"From hell's heart I stab at thee..."

Technically, this may not count since Khan is quoting Melville, but Montalban delivers it perfectly in my book

That said, for some reason the "lifeforms song" (Generations, I think) gets gleefully stuck in my head too.

"transwarp beamin' is like trying to hit a bullet with a smaller bullet, wearing a blindfold, riding a horse." I love this quote, because i can do a dead-on imitation of the actor who played scotty in that movie, especially on this quote.
