I think it would have to be when Q gave Data laughter for that brief moment.

That is a fun moment. He gets this look on his face that seems to say "Ruh-roh, here we go again!"
It is impossible for me to pick a favorite moment. I have many favorite Data sayings, expressions, but choosing a single moment is too much to ask for! I have many favorite quotes, some quirky, some serious: I love the ending dialog in Data's Day (which I have in my signature)... Data saying in that same episode that he was concerned about "chasing an untamed armathoid without cause" (instead of saying "a wild goose chase")... Data saying "ignite the midnight patroleum" as a way of saying "burning the midnight-oil" in All Good Things... little things like that are cute.
When naming a specific moment of greatness for Data, I think of the time when Data took command of a starship in Redemption- Part 2. The feriocity with which he orders the bigot first officer to "Fire!!" torpedos is very unusual. If Data was capable of emotion I would describe it as a moment of anger, but of course he did not have emotion... which made the behavior all that more interesting.
Data's various interactions with Q in Deja Q are also enjoyable, as well as the scene with Spock. Any time Data gets deep about humanity, I listen.
Aw, shucks. Who am I kidding? I love ALL Data moments.

I think I, too, love all Data moments. But one in particular comes to mind: The Naked Now, when he is reciting that limerick, and Picard cuts him off. And then he turns to Worf, "Did I say something wrong?" LOL

Season 2 episode 11 "The Dauphin." (I'm only up to Season 2 episode 20 or so). Data is infected with an alien software that tries to take over. With how capable and how smooth he normally is, it is very strange and scary to see him fight it.
Later in the episode, he flatlines...Geordi closes Data's eyes. I was howling, clawing at the screen. Then Data opens his eyes, sits up (suddenly, like he does), with that adorable curious look on his face--bright-eyed, that little almost-a-half-smile on his lips, says "I am accessing," like he is both surprised and pleased to find himself doing so. Geordi realizes that he's basically done a system restore without knowing it! I laughed so hard, out of sheer relief and the cuteness of him..."I was on Ikonia, now I am on the Enterprise. How did I get here?"
This is the instance that made me notice that when Data comes to after being shut off, his movements are just a bit more robotic than normal--the jerky head movements, that sort of thing. And I laugh because aren't we all a little robotic when we first get up? XD

That was "Contagion" not "The Dauphin"
I am having trouble picking just one, some of the ones already mentioned here, and his time in command of... was it the Sutherland?

So it was, Broadstorm; I stand corrected. Just the sort of mistake a silly little noob like myself would make. I have corrected it in my notes.

I love when he is affected by that virus in "The Naked Now" and he falls down. HAHA!!!! CLASSIC!!!
I also love in First Contact when he tries to fight the Borg and the Queen is just standing there as if she could allow her goons to crush him in a second if she gave the word. When he looks angry and hurt when his arm is sliced.
DATA! OH SWEET DATA!!

Actually, there were several episodes throughout the series in which they played around with his resilience, seeming to kill him off only to have him reset, with or without any help. It got to the point that when I was in a MST3K kind of mood, watching old epsodes, I would say "Oh my God, they killed Data!" (change voice) "you bastards!"
