Nog was promoted twice during the course of DS9 -- from Cadet to Ensign to Lieutenant JG.

Tom Paris was demoted to Ensign. (Was he ever promoted back I can't recall.)

At the end of Lower Decks, (TNG) two of those four main characters were promoted to Lt-jg.

Doesn't happen often, but it does happen.

Chekov because he's...well, Chekov. (Sucked how Koenig's son died...)

Nog, because he grew from a minor annoyance to functioning part of DS9's staff.

Well, I absolutely adore Chekov. AND he got promoted! Do he'd probably be the one I'd choose. But other than that, I do like Harry Kim, except he was never promoted and that made me mad. Also, I never hated Wesley, so he's one of my favorites as well.

Also, for some reason I LOVE episodes that feature what I call "random ensigns", or just random non-main cast crewmembers in general, for example "Lower Decks" of TNG and "Learning Curve" and "Good Shepherd" of Voyager. So just random ensigns in general then. So I guess I can't pick.

Vorik and Taurik, the Vulcan Engineering twins. Though as CWO Finn pointed out, Taurik is no longer an ensign.

Also like Harry Kim, he seems to get a lot of crap from the fans but I think he was a pretty good character, with some crappy lines and the misfortune to have a knack for dying.

For long-term major characters, I have to go with Chekov. So much fun, and really worked his way up.

But for ensigns that only appeared once or twice, I have to vote for Sonya Gomez, who appeared in 2 episodes in season 2 of TNG. She was so fun and had her own unique outlook on life. And she was a pretty good engineer to boot. In books she's made it all the way to Captain now.
