A Tale of Two Sisters, a wonderful eerie story.
Crouching Tiger, Hidden Dragon-wonderful martial arts movie
House of Flying Daggers, more wonderful martial arts and superb scenery.
Red Firecracker, Green Firecracker-a nice love story
Farewell My Concubine-a wonderful drama, very good story
The Eye- a really good suspense/horror, wonderful movie, very good production for that kind of movie, kind of like A Tale of Two Sisters as well.
Gorgeous-fun but sweet Jackie Chan movie
Memoirs of a Geisha-very good movie, wonderful story, very moving
Eat Drink Man Woman-a lovely family romance, literally, each family member gets her man or woman, and fun food scenes.
Ong Bak The Thai Warrior-a good martial arts movie with Tony Jaa.
Return of the Dragon-Bruce Lee's best film I think
Scent of Green Papaya-another love story( I love Asians, see a pattern here :D ).
Tell Me Something-a really good cop/sociopath thriller movie
The Road Home-a wonderful movie, just wonderful
Xiu Xiu The Sent Down Girl-a really good movie, just really good, it's hard to describe, it's very sad, but it's very good.
The Emperor and the Assassin-a bit long, but good story
Raise the Red Lantern-it's been awhile, but it was good
The Story of Qui Ju-a good story
Pan's Labyrinth-darn good weird fantasy movie

I highly recommend:
The Eye
Xiu Xiu The Sent Down Girl
Tell Me Something
Farewell My Concubine

the others are good, like Eat Drink Man Woman, Pan's Labyrinth, House of Flying Daggers, A Tale of Two Sisters and the others, I would still recommend if haven't seen.

Most have probably seen Memoirs of a Geisha or Crouching Tiger, Hidden Dragon, or even Return of the Dragon, I of course recommend those as well, just figured I'd put them last, as I would say they are pretty popular and highly known for the most part.

If you haven't seen, I would check out Farewell My Concubine. It's good along the lines of Memoirs of a Geisha, you might also like the other love story films there.

Seven Samurai is one of those movies I've yet to see.

Ghost in the Shell was good, but a bit convoluted for my taste, I'd have to go with Princess Mononoke and Ninja Scroll.
