It's been stated that in the original series Humans no longer use money {although they still use money in Enterprise } but what about other species that are part of the Federation do they use forms of currency?

They don't use money, they use credits or something like that. I mean the real currency in trek is materials for the stuff they build. The people or aliens don't believe in money so what they do is exchange knowledge or information.

A valid question indeed. What form of credit is used for paying the bar tab at Quark's, ...or at Ten Forward?

it's real simple, starfleet officers get free drinks or quark's going off to jail. :)  As for ten forward, they replicate drinks, so it's free.

I clearly recall many times seeing Guinan mixing liquids together for various drinks at Ten Forward, but there never seemed to be any exchange or payment made for any drink. Maybe when DS9 came into the picture and the Ferengi were conducting commerce for profit, the use of latinum came to be the way of doing business. I'm not sure but it seems like a "bar" of latinum has greater value than a "strip" of latinum, and those are the only 2 denominations I can recall.

Earth and most of the federation practices a form of communism.  Not the soviet form, a more benevolent version.  Some societies have money, but they are largely outside the federation.  There are many different currencies but the most common are credits and gold pressed latinum.  The later is used often by the species living in the vicinity of Deep Space Nine and on the station itself.  It cannot be replicated due to something about its complicated structure, which makes it immune to counterfeiting.

It's a very good question, because Quark was about making money like any good Ferengi so he likely charged. But as you say Starfleet officers didn't seem to be paid and the Federation (the federal government) didn't seem to use currency so how did they pay their bar bill?

Or if Quark did charge, why didn't everyone just use the replimate, for that matter why frequent any shop on the promenade if you can get what your want free from the replimat. Unless your are going for authenticity or atmosphere.

The Bajorans had money, because that woman form Necessary Evil who was blackmailing Bajoran collaborators, so this also likely means Kira got paid, but it was never came up.

Cardassians have money, I know because it's referenced several times... Lek, I think.

Like tribblenator999 said probably a credit system based on Federation resources (material or knowledge).

However another question is how did Dax, the Chief and the Doctor get their hands on latinum when they played Tongo and other Dabo?

Ferengi used Gold Pressed platnum wich is like money, but I think they also barter as well. Credits are cool. What I like the most about the Star Trek universe is that everyone worked, no exscuses. Like right now, credit can be used to harm you and keep a person from getting a job. If you are disabled and unable to work and by disabled, I mean unable to move at all...( no such thing in the Star Trek Universe, Steven Hawkings is a good example..) you could end up homeless and on the streets, and the way things are right now, my own family is facing that delemma. Here is a special plea, from someone who WANTS  to work... Employees please give EVERYONE  a chance, over look the bad credit and hire the qulified person to do the job, yes, but overlook the credit part, because without a job, there is no money to pay back credit... If everyone was working, no welfare or SSI would even be needed, there would be no poverty , and there would be no depression. There would be a job for everyone. In the 80's there were plenty of people working and all had a job to do.  There is  a job for everyone to do! Just be creative and hire someone to do A job. Even if it is someone to fill in the hour you go to lunch... The clients you miss because you take a hour break for lunch.... ( dont you hate going to a place that is closed for a hour because everyone is on a lunch break??? )  Then credit would be payed back and banks would be happy and more money would be spent on funstuff. This is why are economy is in the gutter. :eyesroll:

In the DS9 episode "Bar Association" a reference was made to a quantity of latinum and this was followed by the question, "...is that slips, strips, or bars?" So clearly there are 3 denominations of the universal money. A slip is the smallest denomination and a bar is the biggest.

They reverted to using sand dollars.

McCoy states in Trek III that he has money, and plenty of it...
