Wonder why nobody will produce a large version if the reliant, enterprise-b, enterprise-c or the excelsior?
Any thoughts or or other ships that are large model worthy that im missing?

In the mid '90s they brought a 16" Excelsior model. Never seen the others in a larger model set though.

I think DST will be releasing the Excelsior and the Enterprise-B soon... once they ever decide to finally release the Enterprise-D

Depending on which snap together kits they are they might be nice quality. The Klingon D-7 is a nice snap together kit, just find some pics online to use as reference when you paint it and it will look pretty good. This 3 Enterprise set is snap together and is very good quality:  Here is a TOS three ship set that can be made to look very good with a little effort:

My god, put our ship collection to shame! I have most of the ships but they are still in boxes untill we move to Navada in the near future. The rare collection we have is the toy modle of Enterprise D brige and the Enterprise D enginering room complete with lights and sound, very rare to have, puts the new Star Trek movie brige and energizer room look like toy stuff next to it, even the Star Trek movie dolls don't compare to the collection that we have from DS9 , the OS , movies, NG, Voyager ect...

I guess i was meaning the "art asylum" type toy ships.... I would like to see them come out with an Excelsior or enterprise-B

AA will be releasing them near the end of this year if I remember correctly.

I was wondering, if there is a source of decent models that require a little skill and are not snap togethers. I was hoping maybe 1:350 to smaller then 1:1000. What I really want is every enterprise from NX-01 all the way to the 1701-D and include the Reboot 1701. If anyone has a source please pm with a link or contact information.

AMT/ERTL makes most of the ships except for the NX-01, although the scale varies. You can get the snap together 3 piece sets that cover the 1701, 1701-A & 1701-D and the set that covers the 1701-B, C & E. They are snaps but you usually end up gluing them toghther anyways and the quality is very good, (except for the ENT-D which takes some work) Then ENT-B, C & D is nice ans you can see in the pics I posted. I'm just not a super model builder. They are all in the same scale or very close to it. They run about 20 bucks a pop and can be found on Ebay.

I have dabbled in models off and on for 20 years and prefer the piece by piece building and actually hate the snap togethers. I used to kit bash car models when I was younger.
