Well, what kind of ship would you like to serve on in STO, and in what posision? For me, Captain of an Excelsior-Class ship.

Engineer on something smaller, like a Nova, New Orleans, Steamrunner, or Sabre.

First: PE has stated so far that STO will occur about 20 years after   ST:Nemesis (2379).... so 2399 or 2400.

Between the age of the hulls, and losses during the Dominion Wars, possibly limitations on the number of hulls STO will offer when it goes Gold, and the desire of the development team to create "new" starships for use in the STO Universe....... it is a fairly safe bet we would not expect to see, still in service, and in any numbers in frontier areas; Excelsiors (commissioned between 2287 - 2346), Constellations (2283 - 2295), Mirandas (2243 - 2269), Oberths (2269 - 2338), among other older classes.

That said, among canon-starships commissioned closer to 2400, I'd have to choose the Nova Science Vessel and Scout as a great little starter starship for early in a career.... and moving up eventually to a New Orleans class Frigate.  

Springfield, Intrepid, and Cheyenne would also interest me.  No idea what "new" designs between 2379 and 2400 PE will put forth that might be nice too.....

Captain of an Intrepid Class Starship with everything like in Voyager including the special effects and sounds in season 4, production 176, episode 8 to season 7. Although, it's my goal ! To begin my career...well, I would choose a small ship who would be in a back water sector of Federation Space or perhasp a Defiant or Sovereign class.

I think the Excelsior's will still be around in some capacity in Star Fleet. Considering they were still around some 70-80 years after the time of Kirk and crew, and still in front-line positions at that, they would still probably be serving somewhere in the fleet after only another 20.

Personally, while I think the newer ships offer some additional capabilities, I think using my own and the crew's skills to heavily modify and upgrade an older hull would be a nice challenge too. Besides, not everyone will get to helm the big ships (if anyone actually ever does) so becoming skilled with the smaller ones becomes pretty important. Since I plan on being in Sciences, I think the Nova-class will be the choice, but that depends on what its size and capabilities are. Going on a long-range, deep-space exploration is my ultimate goal, and a runabout or a Defiant-class isn't up to that, although it might be quite interesting to try it out in combat.

A big issue will be the number of hulls that PE iniitally offers with STO.  If player ships are going to see some detail in internal deck spaces.... places for our avatars to walk around in and explore... then I would expect far fewer starships to be modeled.....

In that event, I would expect a few late model canon-starships and refits, plus a few original designs from PE.

If, however we see lots of starships from lots of timeframes, my hope of modeled decks goes out of the airlock I can't visit with my avatar anyways.... and we end up paying a monthly fee to play Bridge Commander:Online without ever stepping off the bridge......

If these are the choices, give me a few late model starships.... plenty of other starship SIMULATORS out there if I want to fly a museum piece around.... STO is billed as a MMORPG.... I want to be able to walk the decks of a starship.

I'd be interested to see just how many decks of the starships they will include, because it would be an enormous task to model every deck of the starships, that is unless they create a standard model and re-use it.

If they do use a standard model, however, I feel they should include the ability to customise aspects of the ships interior, such as placing paintings and other decorations on the corridors or in quarters.

I think that at the very least you should be able to customise your quarters to suit you.

I'd rather see fewer modern hulls devloped well enough to give me large portions of several decks to move around in.

A small ship like a Defiant or Nova you can do most of the decks... Nova is only 8 decks tall...very small... probably get away with partial modeling of 6 or 7 decks if you follow the best near-canon material on the class.

I don't think so, I think, it'll be like in Guild Wars.  Vast space and things to do.
