I was only considering contempory starship classes but if others are to be considered then the Enterprise J from Enterprise could take it.  Or perhaps the future "timeship" from Voyager in the episode were Seven keeps dying.

power is arbitary.

In a straight fight, a sovreign would easily nail a defiant.
Stick them in an asteroid field, and its a different story.  The sovreign would be unable to manouver, and the defiant would sit in its blind spot, and take pot-shots.

On SFC3, try pitching a fully laden sovreign against it.  It takes a lot longer to beat it than you might think.

That is only partly true, since a lot of power in the Galaxy Class is for scientific and sensor function, where the slightly smaller Sovereign has less powerloss in those things and propably a more advanced and more powerfull Warpcore, hence more powersurplus.
Secondly the small Defiant class was considered heavily overpowered by its warpcore and had much more combatpower than a lumbering Galaxy class ship and better weapons.
thirdly, the number of nacelles is irrelevant in this case, since these only function as a sort of exhaust for the warpcore, meaning that they controle the flow of the warpfield, not creating one.
fourthly, the weaponsystems onboard themselves are determining what combatpower a ship has. Not only energy weapons can be included, but projectiles as well, and the Galaxy is coming out worse of all in this case, since it still used photon torpedoes and had only two launchers, although of the burst type, which is significantly inferior to the Defiant, Sovereign and Prometheus class. Even the small Defiant could make mincemeat of a Galaxy in no time when battleing one. Even the upgraded older Excelsior is better than a Galaxy in this case.

Galaxy is 500 m, fore to aft, sovreign is 750m from fore to aft.

The Galaxy is 641  meters long and 145 meters high
The Sovereign is 680 meters long and 87 meters high

So the Galaxy is shorter but higher and heavier at 4,960,000 metric tons
And the Sovereign is longer but shorter and its mass is 3,500,000 metric tons   :)

Most advanced doesn't necesserily translate into most powerful, but even if it did, this statement was made before the promethius entered active service (indeed, Geordie would have had no idea that it even existed).

Well they were talking about engaging the Borg (i.e. battle) and why the Enterprise was ordered not to attend the party.  I doubt Geordi was referring to Enterprise-E's most advanced scientific instrumentation sensors, luxurious holodecks, or fully stocked diplomatic galley, with caviar and crackers.  It's safe to assume Geordi meant the Enterprise would be able to do some serious damage with its weaponry and withstand being blown to bits a lot better than the other ships in the fleet.
